Molly Moon's is known for making its ice cream on-site in each of its shops, rather than in central commissaries. This method helps to avoid the possibility of the ice cream partially melting and refreezing during delivery, ensuring a consistent quality product. Customers visiting the new West Seattle Junction shop can expect a menu featuring fifteen flavors daily. This includes eleven "always" flavors that are churned year-round, alongside four seasonal options that rotate to highlight fresh ingredients from the Northwest region.

Neitzel expressed excitement about new store opening, “We’re so excited to be in this neighborhood, We’ve wanted to be here for a long time. It’s really special to be right across the street from Easy Street Records, one of my favorite record stores. So excited to be in such a fun and lively spot”.

The company's growth began with its first ice cream shop opening in Wallingford in 2008. Since then, Molly Moon's has steadily expanded its presence across the Seattle metropolitan area, opening locations in neighborhoods such as Madrona in May 2011, Redmond in 2016 (its seventh shop), and Columbia City in 2017 (its eighth shop). A shop also opened at Waterfront Park in Seattle on May 22. In addition to its retail presence, Molly Moon's participated in Seattle's pilot parklet program in 2014, building small parks outside its Wallingford and Madrona shops.
They are open 12 pm - 11 pm everyday.
