Fine Baking Company bounces back: Owner Chely Smithgall serves up sweetness amid recovery
Still recovering after a serious accident, Chely Fit Smithgall is hoping people will stop by the Fine Baking Company at 6969 California Ave SW and get some cupcakes and cookies.

The scent of cinnamon and sugar is once again filling the air at Fine Baking Company, located at 6969 California Ave SW, (near Frontenac Street on California Ave) where owner Chely Smithgall is channeling her incredible resilience into every perfectly crafted cupcake. After a difficult few months following a serious accident, Chely is back in the kitchen, proving that while she may be down, she is certainly not out. Customers are encouraged to support this cherished local business by placing orders via telephone at (206) 423-1745.
An Unforeseen Obstacle
This past August, Chely suffered significant injuries after the deck she was standing on broke. The accident was severe: she tore her meniscus, severely hurting her knee. For more than a month following the middle of August, Chely couldn't walk at all, followed by two more weeks requiring a cane. Even now, she is undergoing ongoing treatment. Chely admits that she is currently limited in the time she can spend standing up, making it hard for her to be creative and maintain regular operations.
Because the accident forced her to close suddenly, not only did Chely miss orders, but the prolonged closure led some community members to assume the business was permanently out of operation. She put a sign up explaining the "medical issues," but she noted that it has been challenging to bring customers back after being closed for too long. Despite having to work through her recovery to pay rent, Chely remains dedicated to her customers. She currently operates on limited hours: Tuesday through Friday, 12:00 p.m. to 5:00 p.m., and Saturday, 10:00 a.m. to 3:00 p.m.. She is optimistically aiming to return to full-time hours after the New Year, following the completion of her physical therapy (PT).

Chely’s determination shines through in her delicious offerings. She continues to keep up with orders placed in advance and ensures that all items are made fresh. If you’re looking for a reason to stop by and support this amazing owner, look no further than her best-selling flavors:
• The Lemon Cupcake: This bright and tangy variety is one of the biggest sellers at the bakery.
• The Chocolate Oreo Cupcake: Known as a big seller, the Chocolate Oreo variety is highly favored by customers.
• The Churro Cupcake: A delicious, seasonal favorite, the Churro cupcake is cinnamon-based and resembles a regular churro in color and flavor The sweet cinnamon spice is incorporated into both the cupcake and the frosting.

Chely emphasizes that people enjoy pretty much everything she makes. However, keeping the inventory stocked depends on customer support. She sadly had to throw away a bunch of fresh goods because customers weren't coming in to buy them.
