Hey Bagel founder Andrew Rubinstein has signed a lease to open a second location in West Seattle, targeting an opening date of May 2027.

The new storefront will be located at 4448 California Ave SW, in a newly completed mixed-use building situated just north of the Alaska Junction. After launching his flagship shop at University Village, Rubinstein originally searched for expansion sites on the Eastside. When that search stalled, he pivoted to West Seattle, praising the neighborhood's strong community culture, vibrant street energy, and views.

This arrival addresses a longstanding gap in the local food scene. West Seattle has been without a standalone bagel shop since June 14, 2015, when Zatz a Better Bagel closed in the Admiral District. Hey Bagel's expansion is part of a broader wave of new bagel options coming to the area, alongside Royal Bagel, which is planning to open at 6045 California Ave SW in Morgan Junction.

Hey Bagel is known for organic sourdough bagels baked continuously throughout the day so they are served hot out of the oven. The shop operates on a "rip and dip" philosophy, serving whole, piping hot bagels rather than pre-slicing or toasting them. Alongside bagels, the menu features custom schmears, bialys, and vegan options.

Rubinstein, who previously founded Rubinstein Bagels before starting Hey Bagel, recently swept top honors at BagelFest West, winning "Best Bagel" and "Best Bagel: Sourdough". The victories earned him an invitation to compete at the national New York BagelFest.
